ESSENTIAL FUNCTIONS: * Leads the department by creating a positive, supportive environment where talents, skills and trade practices are exchanged and operational support is provided for all employees. * Energetic people person who is a highly visible manager specializing in building strong relationships with players & employees. * Serves as a leader for employees while fostering teamwork, employee morale, motivation and open communication. * Coaches and develops employees using a consistent approachable demeanor and clearly articulating expectations. * Strives to improve and streamline departmental operations through the continuous assessment of policies and procedures, work processes and program effectiveness/value. * Exhibit sound decision-making with emphasis on motivating team and maintaining high morale. * Be a participative member of the team by volunteering and being involved with projects, committees, and task forces by providing input and suggestions. * Responsible for, or actively participates in, the initiation of personnel actions including but not limited to: interviews, training, candidate selection, terminations, performance reviews, promotions, transfers and disciplinary actions. * Selection of new employees, training and providing each with the knowledge, development and appropriate direction to perform his/her responsibilities. * Set performance expectations and provide operational support for the supervisory team and employees. * Provide continuous positive coaching for development of employees and appropriate corrective action when necessary. * Ensure timely and accurate performance appraisals and accurate work history entries. * Recommends changes on all standard menus and consistently strives through menu planning to improve food costs, volume, quality, attractiveness and efficient preparation of all food related items. * Completes the required daily financial tools and reports. * Analyzes and evaluates profit and loss statements. * Prepare annual budgets and plans for assigned outlets. * Monitor employees with cash handling privileges to ensure proper cash handling procedures. * Executes and audits supplies and inventory items insuring cost controls. * Schedules employees in conjunction with business forecasts and predetermined budget. * Recommends wage and salary adjustments for personnel within established limits. * Build templates for schedules, shift logs, and seating charts. * Ensure service recovery activities. * Contribute to the improvement of the business with ideas. * Facilitate change effort within the department and the casino. * Ensures that all service equipment is operational and handled safely, reporting mechanical issues to appropriate team members. * Communicates variances from established standards to Food & Hotel Director. * Enforces all appearance and uniform guidelines. * Conducts periodic inspections of all assigned areas and administers safety policies and procedures pertaining to the procedures. * Special projects, as requested. * Adheres to regulatory, departmental and company policies in an ethical manner. * All other tasks as assigned by Food & Hotel Director. QUALIFICATIONS: *Bachelor's Degree preferred. High School Diploma or equivalent required. *Minimum of 4-years related experience in a large volume food establishment. *Culinary expertise in multiple specialties is preferred. *Must possess exemplary customer service, written/verbal communication, interpersonal and managerial skills. *Knowledge of all phases of food administration, cost controls and administration is required. *Computer skills (Micros, Excel, Word, Outlook, etc.) required. *Must be flexible in schedule to include evenings, holidays, and weekends *Must pass our ManagerLap assessment *Internal candidates must meet Harrah's Joliet transfer eligibility requirements. JOB DEMANDS: *Must be able to list up to 30lbs and carry objects weighing up to 30lbs and occasionally life/move up to 100lbs. *Must be able to work in areas containing secondary smoke, high noise levels, bright lights and dust. *Position requires 10% standing, 15% sitting, 75% walking. * Requires some twisting, climbing, stooping, reaching overhead, bending, pushing and kneeling. * Must be able to respond to touch, speech, taste, smell, aural and visual cues. * Must be able to tolerate areas containing second-hand smoke. * Fast-paced environment involving constant internal and external contact.
